A Legacy Born from Passion (and a Little Rebellion)

Absinthia’s journey began in 1997, when I (Absinthia Vermut) started distilling absinthe underground, long before it was legal in the United States. The name Absinthia was given to me on April Fool’s Day that year — a nod to my obsession with this mysterious, often misunderstood spirit.

When absinthe was finally legalized in 2007, I was ready. After years of research, experimentation, and devotion to perfecting traditional techniques, I founded Absinthia’s Bottled Spirits to bring an authentic, organic absinthe to the world.
