Blanche

Crystal clear with a lighter, floral profile. Balanced and silky with a pronounced fennel note and subtle citrus finish.

Verte

Herbaceous and rich with notes of green anise, grand wormwood, and sweet fennel. Slightly grassy, clean, and full-bodied. No sugar added.

Barrel-Aged

Rested in oak for depth and warmth. Adds layers of vanilla, baking spice, and honeyed wood without losing the signature herbal punch.

Bleue

Naturally colored with butterfly pea flower. A softer licorice start with a delicate herbal mid-palate and a hint of earthiness. Gorgeous in both flavor and presentation.

Absinthe is an unsweetened spirit, not a liqueur. Sugar is not added to the bottle. Instead, some drinkers choose to add sugar when preparing Absinthe with cold water. Historically, tastes and serving traditions varied, and today sugar remains entirely a matter of personal preference.

Absinthe is often described as having a licorice-like flavor, but that’s overly simplistic. Its characteristic flavor comes primarily from anise, balanced by wormwood’s bitterness, fennel’s brightness, and the other botanicals used by the distiller. Licorice is actually an entirely different plant, native to a different part of the world, and star anise is a different plant as well, despite sharing some of the same aromatic compounds and familiar flavor notes.

If you enjoy pastis, ouzo, or sambuca, you’ll likely appreciate Absinthe, but a well-made Absinthe is far more complex, herbal, and layered, and typically much less sweet.
