Ingredients
1 ½ ounces Absinthia Absinthe Blanche
½ ounce simple syrup
1 ounce lemon juice
8 mint leaves
Soda water, to top
Mint sprig and lemon peel, for garnish
Directions
Muddle first four ingredients in a cocktail shaker. Add ice and shake well. Strain into a rocks glass over fresh ice, then top up with soda water. Garnish with mint sprig and lemon peel.
