Early Autumn Absinthe Cocktail


1.5 oz gin
.5 oz Absinthia Absinthe Blanche
1 oz apple cider
.5 oz pear brandy
.5 oz pear syrup
.5 oz fresh squeezed lemon juice
Ginger beer


In a cocktail shaker, combine gin, Absinthia Absinthe Blanche, brandy, apple cider, lemon juice, and pear syrup. Fill with ice and shake well. Strain into a rocks glass filled with fresh ice. Top with ginger beer.
Garnish with lemon peel and cinnamon stick.

To make the pear syrup, placed peeled pears in brown sugar, molasses, cloves, and vinegar in a pot. Cook on low heat to simmer for around an hour. Enjoy the pears with vanilla ice cream, and use the syrup for cocktails.
